  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 1 lb large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/2 cup chicken or vegetable broth
  • 1/4 cup heavy cream
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh parsley
  • Salt and freshly ground black pepper to taste

Preparation

  1. Step 1

    Heat olive oil and 1 tablespoon of butter in a large skillet or pan over medium-high heat. Add the shrimp to the skillet in a single layer and cook for 1-2 minutes per side, until pink and opaque. Remove shrimp from the pan and set aside.

  2. Step 2

    Add the remaining 1 tablespoon of butter to the skillet. Sauté the minced garlic for 30 seconds until fragrant, being careful not to burn it.

  3. Step 3

    Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan. Stir in the heavy cream and lemon juice and let the sauce simmer for 2-3 minutes, until slightly thickened.

  4. Step 4

    Return the cooked shrimp to the skillet and toss to coat in the creamy sauce. Stir in the fresh parsley. Season with salt and pepper to taste. Serve immediately.
