  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 small onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 cup wild rice blend, rinsed
  • 3 cups chicken broth
  • 1/2 cup heavy cream
  • 1 tsp dried thyme
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish

Preparation

  1. Step 1

    Heat olive oil in a large Dutch oven or pot over medium-high heat. Season chicken pieces with salt and pepper. Add chicken to the pot and cook until lightly browned on all sides, about 5-7 minutes. Remove chicken from the pot and set aside.

    Add chopped onion, diced carrots, and celery to the pot. Cook, stirring occasionally, until vegetables begin to soften, about 5-7 minutes.

    Add the rinsed wild rice blend and chicken broth to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes, or until the rice is tender. (Check package directions as wild rice cooking times can vary).

    Stir in the heavy cream and return the cooked chicken to the pot. Cook for 5 minutes, or until chicken is heated through and the sauce has slightly thickened.

    Taste and adjust seasoning if needed. Serve hot, garnished with fresh chopped parsley.

  • For a thicker consistency, remove about 1/4 cup of the cooked rice and mash it before returning it to the pot.
