- 12 oz short pasta (like penne or rotini)
- 1 tbsp olive oil
- 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, packed in oil, drained and chopped
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese, plus more for serving
- 1/4 cup fresh basil, chopped
- Salt and black pepper to taste
- Pinch of red pepper flakes (optional)
Preparation
Step 1
Cook pasta according to package directions until al dente. Reserve about 1 cup of pasta water before draining. Set aside.
Step 2
While pasta cooks, heat olive oil in a large skillet or Dutch oven over medium-high heat. Add chicken cubes and cook for 5-7 minutes, stirring occasionally, until browned on all sides and cooked through. Remove chicken from the skillet and set aside.
Step 3
Reduce heat to medium. Add diced onion to the skillet and cook until softened, about 3-5 minutes. Add minced garlic and chopped sun-dried tomatoes, and cook for another minute until fragrant.

Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan. Stir in the heavy cream and red pepper flakes (if using). Bring the sauce to a gentle simmer and cook for 2-3 minutes, allowing it to slightly thicken.
Step 5
Return the cooked chicken to the skillet. Stir in the grated Parmesan cheese until melted and smooth. Season with salt and black pepper to taste.

Add the drained pasta to the skillet and toss everything together until well coated. If the sauce is too thick, add a splash of the reserved pasta water until your desired consistency is reached.

Stir in the fresh basil just before serving. Garnish with extra Parmesan and basil, if desired.
