- 1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 small onion, finely chopped (or 2 shallots)
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream (or half-and-half)
- 1/4 cup grated Parmesan cheese
- 5 oz fresh spinach
- Optional: 1 tbsp fresh parsley, chopped, for garnish
Preparation
Step 1
Season chicken pieces with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes, turning occasionally, until browned and cooked through. Remove chicken from the skillet and set aside.
Step 2
Reduce heat to medium. Add chopped onion (or shallots) to the same skillet and cook for 3-4 minutes until softened. Add minced garlic and cook for another minute until fragrant.

Pour in chicken broth, scraping up any browned bits from the bottom of the pan. Bring to a simmer and cook for 2-3 minutes, allowing the liquid to reduce slightly.

Stir in heavy cream and Parmesan cheese. Continue to simmer for 2-3 minutes until the sauce begins to thicken.

Add fresh spinach to the skillet, stirring until it wilts completely into the sauce, about 2-3 minutes.
Step 6
Return the cooked chicken to the skillet. Toss to coat evenly in the creamy spinach sauce. Taste and adjust seasoning as needed.

Serve immediately, garnished with fresh parsley if desired. Great with rice, pasta, or crusty bread.
