- 1 tbsp butter
- 1.5 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
- 8 oz cremini or button mushrooms, sliced
- 1 small yellow onion, chopped
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1 tbsp Dijon mustard
- 1 tsp dried thyme (or 1 tbsp fresh thyme leaves)
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish
Preparation
Step 1
Heat olive oil and butter in a large skillet or Dutch oven over medium-high heat. Season chicken pieces with salt and pepper.
Step 2
Add chicken to the hot skillet and cook until golden brown and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.

Add sliced mushrooms to the same skillet and cook, stirring occasionally, until softened and browned, about 5-7 minutes. Add chopped onion and cook until softened, about 3 minutes. Stir in minced garlic and dried thyme; cook for 1 minute until fragrant.
Step 4
Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet. Stir in heavy cream and Dijon mustard. Reduce heat to low and let simmer for 3-5 minutes, until the sauce slightly thickens.
Step 5
Return the cooked chicken to the skillet, tossing to coat in the creamy sauce. Season with additional salt and black pepper to taste.
Step 6
Garnish with fresh parsley and serve immediately, perhaps over pasta, rice, or with crusty bread.
