Ingredients

Yield: 6 servings

Main

  • 2 cups cooked chicken, shredded or diced
  • 4 cups fresh broccoli florets, roughly chopped
  • 1 (10.5 oz) can cream of chicken soup
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese, divided
  • 1/2 cup shredded mozzarella cheese (optional, for extra gooeyness)
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1/2 cup crushed butter crackers (like Ritz) or breadcrumbs (for topping)

Preparation

  1. Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.

  2. Step 2

In a large bowl, whisk together the cream of chicken soup, milk, garlic powder, and black pepper until smooth.

  3. Step 3

Stir in the cooked chicken, broccoli florets, and 3/4 cup of the cheddar cheese (and mozzarella, if using) into the soup mixture. Mix until everything is well combined.

  4. Step 4

Pour the chicken and broccoli mixture into the prepared baking dish, spreading it evenly.

  5. Step 5

Sprinkle the remaining 1/4 cup of cheddar cheese over the top, followed by the crushed crackers or breadcrumbs.

  6. Step 6

Bake for 25-30 minutes, or until the casserole is bubbly around the edges and the topping is golden brown. If the top starts to brown too quickly, you can loosely cover it with foil.

  7. Step 7

Let stand for 5 minutes before serving. Enjoy!

Tips

  • Use leftover rotisserie chicken for an even faster meal prep.
  • Feel free to swap cheddar for your favorite melting cheese, like Monterey Jack or Gruyere.
  • For a slightly healthier twist, use reduce-fat soup and milk, and you can steam the broccoli briefly before adding to the casserole for a softer texture.
