  • 1 lb Italian sausage (sweet or hot), casings removed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (15 oz) can cannellini beans, rinsed and drained
  • 1/2 cup chicken broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 cups baby spinach
  • Salt and freshly ground black pepper to taste
  • Crusty bread for serving

Preparation

  1. Step 1

    Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the Italian sausage (without casings) and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain off any excess fat and set the sausage aside.

    Add chopped onion to the same skillet and cook until softened, about 3-4 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.

    Stir in the diced tomatoes (undrained), rinsed cannellini beans, chicken broth, dried oregano, dried thyme, and red pepper flakes (if using). Bring the mixture to a simmer.

    Return the cooked sausage to the skillet. Reduce heat to medium-low, cover, and simmer for 10 minutes to allow the flavors to meld.

    Stir in the baby spinach until wilted, about 1-2 minutes. Season with salt and freshly ground black pepper to taste.
