- 1 tbsp apple cider vinegar
- 1 tsp caraway seeds (optional, but recommended!)
- 1/2 tsp dried thyme
- Salt and black pepper to taste

Step 1
Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add sliced sausage and cook until browned and slightly crispy, about 5-7 minutes. Remove sausage and set aside, leaving rendered fat in the pan.

Add chopped onion to the skillet and cook until softened, about 3-4 minutes. Stir in minced garlic, caraway seeds (if using), and dried thyme, cooking for another minute until fragrant.

Add chopped cabbage to the skillet. It will look like a lot, but it will cook down. Cook, stirring occasionally, for 5-7 minutes until the cabbage starts to wilt.

Pour in chicken broth and apple cider vinegar. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 10-15 minutes, or until cabbage is tender. Stir occasionally.
Step 5
Return the cooked sausage to the skillet and stir to combine. Cook for another 2-3 minutes to heat through. Season with salt and black pepper to taste.
Step 6
Serve hot, perhaps with a dollop of Dijon mustard and a side of crusty bread or mashed potatoes.
