Cozy Sausage and Cabbage Skillet

This Cozy Sausage and Cabbage Skillet is the kind of warm hug you need on a chilly evening. It's incredibly simple, uses affordable ingredients, and delivers a deeply flavorful meal that feels both wholesome and satisfying. Plus, it all comes together in one pan!

Ingredients

Yield: 4 servings

Main

  • 1 tbsp olive oil
  • 1 lb smoked sausage (kielbasa or similar), sliced into 1/2-inch rounds
  • 1 small head green cabbage (about 2 lbs), cored and chopped
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tbsp apple cider vinegar
  • 1 tsp caraway seeds (optional, but recommended!)
  • 1/2 tsp dried thyme
  • Salt and black pepper to taste

For Serving (Optional)

  • Dijon mustard
  • Crusty bread or mashed potatoes

Preparation

  1. Step 1

Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add sliced sausage and cook until browned and slightly crispy, about 5-7 minutes. Remove sausage and set aside, leaving rendered fat in the pan.

  2. Step 2

Add chopped onion to the skillet and cook until softened, about 3-4 minutes. Stir in minced garlic, caraway seeds (if using), and dried thyme, cooking for another minute until fragrant.

  3. Step 3

Add chopped cabbage to the skillet. It will look like a lot, but it will cook down. Cook, stirring occasionally, for 5-7 minutes until the cabbage starts to wilt.

  4. Step 4

Pour in chicken broth and apple cider vinegar. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 10-15 minutes, or until cabbage is tender. Stir occasionally.

  5. Step 5

Return the cooked sausage to the skillet and stir to combine. Cook for another 2-3 minutes to heat through. Season with salt and black pepper to taste.

  6. Step 6

Serve hot, perhaps with a dollop of Dijon mustard and a side of crusty bread or mashed potatoes.

Tips

  • Don't skip the caraway seeds! They add a wonderful, authentic flavor that complements the cabbage beautifully.
  • For a vegetarian option, use plant-based sausage and vegetable broth.
  • Any leftover cooked cabbage can be delicious tucked into a grilled cheese sandwich.
