Ingredients
Yield: 4 servings
Main
- 1 tbsp olive oil
- 1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
- 1 small yellow onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 (16 oz) package potato gnocchi (shelf-stable)
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese, plus more for serving
- 5 oz fresh spinach
- 1 tsp dried Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
Preparation
Step 1
Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken pieces and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from the pot and set aside.
Step 2
Add chopped onion to the pot and cook until softened, about 3-4 minutes. Stir in minced garlic and cook for another minute until fragrant.
Step 3
Pour in the chicken broth and bring to a simmer. Add the gnocchi and Italian seasoning. Cook according to package directions (usually 2-3 minutes) until gnocchi float to the top and are tender.
Step 4
Reduce heat to low. Stir in the heavy cream and Parmesan cheese until well combined and the sauce is slightly thickened. Add the cooked chicken back to the pot.
Step 5
Add the fresh spinach, a handful at a time, stirring until it wilts into the sauce. Season with salt and pepper to taste.
Step 6
Serve hot, garnished with extra Parmesan cheese, if desired. Enjoy this comforting meal!
Tips
- For extra veggies, add sliced mushrooms or diced carrots along with the onion.
- If the sauce is too thick, thin it with a splash of milk or extra chicken broth.
- Ensure the gnocchi are cooked just until they float; overcooking can make them mushy.
