For the Stir-Fry

  • 8 oz linguine or ramen noodles
  • 1 tbsp sesame oil
  • 1 lb boneless, skinless chicken breast or thighs, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 cup broccoli florets
  • 1 red bell pepper, thinly sliced
  • 1 cup snap peas
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated

For the Sauce

  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tbsp oyster sauce (optional, or more soy sauce)
  • 1 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch
  • 1/4 cup water or chicken broth

For Garnish

  • Toasted sesame seeds
  • Sliced green onions

Preparation

  1. Step 1

    Cook noodles according to package directions. Drain, rinse with cold water, and toss with 1 tsp sesame oil to prevent sticking. Set aside.

  2. Step 2

    In a small bowl, whisk together all sauce ingredients: soy sauce, oyster sauce (if using), brown sugar, rice vinegar, cornstarch, and water/broth until smooth. Set aside.

  3. Step 3

    Heat 1 tbsp olive oil and remaining 2 tsp sesame oil in a large skillet or wok over medium-high heat. Add chicken and cook for 4-6 minutes, until browned and cooked through. Remove chicken from skillet and set aside.

  4. Step 4

    Add broccoli and red bell pepper to the skillet. Stir-fry for 3-4 minutes until vegetables are tender-crisp. Add snap peas, minced garlic, and grated ginger. Stir-fry for another 1-2 minutes until fragrant.

  5. Step 5

    Return chicken to the skillet with the vegetables. Give the sauce a quick whisk, then pour it over the chicken and vegetables. Cook, stirring constantly, for 1-2 minutes until the sauce thickens and coats everything.

  6. Step 6

    Add the cooked noodles to the skillet. Toss everything together until the noodles are well coated and heated through.

  7. Step 7

    Serve immediately, garnished with toasted sesame seeds and sliced green onions.

Tips

  • Prep all your ingredients (chop veggies, make sauce) before you start cooking, as stir-fries cook very quickly.
  • Swap out vegetables based on what you have: carrots, mushrooms, baby corn, or bok choy would all be delicious.
