When you're craving something comforting and deeply satisfying, but don't have hours to spend in the kitchen, this Cozy Chicken & Chickpea Stew is your answer! It's an incredibly flavorful one-pot meal that comes together with pantry staples, making it perfect for a chilly evening or any night you need a little extra warmth. Plus, it gets even better as leftovers!

  • 1 tbsp olive oil
  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 large onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (15 oz) can chickpeas, rinsed and drained
  • 4 cups chicken broth
  • 1 cup frozen peas
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish (optional)

Preparation

  1. Step 1

    Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Season the chicken pieces with salt and pepper. Add chicken to the pot and cook until lightly browned on all sides, about 5-7 minutes. Remove chicken to a plate and set aside.

  2. Step 2

    Add onion, carrots, and celery to the pot. Cook, stirring occasionally, until softened, about 6-8 minutes. Add minced garlic, oregano, and thyme, and cook for another minute until fragrant.

  3. Step 3

    Stir in the diced tomatoes (with their juices), rinsed chickpeas, and chicken broth. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the pot.

  4. Step 4

    Return the browned chicken to the pot. Reduce heat to medium-low, cover, and simmer for 20 minutes, or until chicken is cooked through and vegetables are tender.

  5. Step 5

    Stir in the frozen peas and cook for another 2-3 minutes, until heated through. Taste and adjust seasoning with additional salt and pepper if needed.

  6. Step 6

    Ladle into bowls and garnish with fresh parsley, if desired. Serve warm with crusty bread for dipping.

Tips

  • For a thicker stew, mash a spoonful or two of the chickpeas against the side of the pot after simmering.
  • This stew freezes beautifully! Let it cool completely before transferring to freezer-safe containers for up to 3 months.
  • Feel free to add other vegetables like diced potatoes or green beans alongside the carrots and celery.
