- 1 small yellow onion, chopped
- 3 cloves garlic, minced
- 1.5 cups orzo pasta
- 4 cups chicken broth
- 1/2 cup heavy cream
- 5 oz fresh spinach
- 1/4 cup grated Parmesan cheese, plus more for serving
- Salt and black pepper to taste

Step 1
Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the Italian sausage (if using links, remove casings and crumble). Cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess grease if necessary.

Add the chopped yellow onion to the pot and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.

Stir in the uncooked orzo pasta, coating it with the sausage and onion mixture. Pour in the chicken broth and bring to a boil. Reduce heat to medium-low, cover, and simmer for 10-12 minutes, or until the orzo is tender and most of the liquid has been absorbed, stirring occasionally to prevent sticking.

Stir in the heavy cream and fresh spinach. Cook, stirring gently, until the spinach wilts down completely, about 2-3 minutes.

Remove from heat and stir in the grated Parmesan cheese. Season with salt and black pepper to taste. If the mixture is too thick, you can add a splash more broth or water.
