  • 1 lb smoked sausage (kielbasa or similar), sliced into 1/2-inch rounds
  • 1.5 lbs small potatoes (such as baby reds or Yukon Golds), quartered or cut into 1-inch pieces
  • 1 large bell pepper (any color), chopped into 1-inch pieces
  • 1 small onion, chopped
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp dried thyme
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish (optional)

Preparation

  1. Step 1

    Heat olive oil in a large oven-safe skillet (like a cast iron skillet) over medium-high heat. Add sliced sausage and cook for 3-5 minutes, until lightly browned. Remove sausage from skillet and set aside, reserving a little drippings in the pan.

    Add potatoes to the skillet. Cook, stirring occasionally, for 8-10 minutes, until lightly browned and starting to soften. You may need to add a touch more oil if the pan is dry.

    Add chopped bell pepper, onion, paprika, garlic powder, and dried thyme to the skillet. Season with salt and pepper. Cook for another 5-7 minutes, stirring occasionally, until vegetables begin to soften.

    Return the cooked sausage to the skillet, stirring to combine everything. Cover the skillet, reduce heat to medium-low, and cook for 5-7 minutes, or until potatoes are tender through.

    Alternatively, if your skillet is oven-safe, transfer to a preheated 375°F (190°C) oven for 10-15 minutes until potatoes are tender and everything is heated through.

    Serve hot, garnished with fresh parsley if desired.
