Shrimp & Marinade

  • 1 lb large shrimp, peeled and deveined, tails on or off
  • 1 tablespoon olive oil
  • Juice of 1 lime (about 2 tablespoons)
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For Serving (choose your favorites!)

  • 3 cups cooked jasmine or brown rice
  • 1 avocado, diced
  • 1/2 cup corn (fresh or frozen, thawed)
  • 1/2 cup black beans, rinsed and drained
  • 1/4 cup red onion, thinly sliced or minced
  • Fresh cilantro, chopped
  • Lime wedges, for serving

Preparation

  1. Step 1

    In a medium bowl, combine shrimp, olive oil, lime juice, chili powder, cumin, smoked paprika, cayenne pepper (if using), salt, and pepper. Toss to coat shrimp evenly. Let marinate for at least 10 minutes, or up to 30 minutes in the refrigerator.

  2. Step 2

    Heat a large skillet or cast-iron pan over medium-high heat. Add the marinated shrimp in a single layer (you may need to work in batches to avoid overcrowding). Cook for 2-3 minutes per side, until pink and opaque and cooked through. Do not overcook.

  3. Step 3

    To assemble bowls, divide cooked rice among four bowls. Top with cooked chili-lime shrimp. Arrange desired toppings like diced avocado, corn, black beans, and red onion around the shrimp.

  4. Step 4

    Garnish with fresh cilantro and serve with extra lime wedges for squeezing over.

Tips

  • Don't marinate the shrimp for too long (over 30 minutes) as the lime juice can start to 'cook' the shrimp, making them tough.
  • For an extra kick, add a dash of your favorite hot sauce to the finished bowls.
