- 2 cups cooked rice (white or brown)
- 2 cups cooked chicken, shredded or diced
- 2 cups broccoli florets, steamed or lightly blanched until tender-crisp
- 1 (10.5 oz) can cream of chicken soup (or homemade equivalent)
- 1/2 cup milk
- 1/2 cup sour cream or plain Greek yogurt
- 1 tsp garlic powder
- 1/2 tsp onion powder
- Salt and freshly ground black pepper to taste
- 2 cups shredded cheddar cheese, divided
- Optional: 1/2 cup crushed butter crackers or panko for topping
Preparation
Step 1
Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.

In a large mixing bowl, combine the cooked rice, cooked chicken, and steamed broccoli florets. Gently mix.

In a separate medium bowl, whisk together the cream of chicken soup, milk, sour cream (or yogurt), garlic powder, onion powder, salt, and pepper until smooth. Stir in 1.5 cups of the shredded cheddar cheese.

Pour the soup mixture over the rice, chicken, and broccoli. Stir gently until everything is well combined and coated.

Transfer the mixture to the prepared baking dish, spreading it evenly. Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top. If desired, sprinkle with crushed crackers or panko for a crunchy topping.

Bake for 25-30 minutes, or until bubbly around the edges and the cheese is melted and golden brown. If using a cracker/panko topping, bake until golden.

Remove from oven and let stand for 5-10 minutes before serving to allow it to set.

- To save time, use rotisserie chicken. Many grocery stores also sell pre-cooked rice.
