  • 1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 12 oz broccolini, trimmed and cut into florets
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (10.5 oz) can cream of chicken soup (or mushroom)
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese, plus more for topping
  • 1/2 cup shredded mozzarella cheese
  • Salt and freshly ground black pepper to taste
  • Optional: red pepper flakes for a little kick

Preparation

  1. Step 1

    Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.

    Heat olive oil in a large skillet over medium heat. Add chicken pieces and cook until lightly browned on all sides, about 5-7 minutes. Don't worry if it's not cooked through.

    Add chopped onion to the skillet and cook until softened, about 3-4 minutes. Stir in minced garlic and cook for another minute until fragrant.

  • If you don't have broccolini, regular broccoli florets or even cauliflower would work beautifully.
