When you need a hearty, cheesy dinner that practically makes itself, look no further! This Cheesy Chicken and Broccolini Bake brings together tender chicken, crisp-tender broccolini, and a creamy, cheesy sauce in one delightful dish. It’s comforting, easy, and sure to become a family favorite.
Ingredients
Yield: 4 servings
Main
- 1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
- 12 oz broccolini, trimmed and cut into florets
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (10.5 oz) can cream of chicken soup (or mushroom)
- 1/2 cup milk
- 1 cup shredded cheddar cheese, plus more for topping
- 1/2 cup shredded mozzarella cheese
- Salt and freshly ground black pepper to taste
- Optional: red pepper flakes for a little kick
Preparation
Step 1
Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
Step 2
Heat olive oil in a large skillet over medium heat. Add chicken pieces and cook until lightly browned on all sides, about 5-7 minutes. Don't worry if it's not cooked through.
Step 3
Add chopped onion to the skillet and cook until softened, about 3-4 minutes. Stir in minced garlic and cook for another minute until fragrant.
Step 4
Add broccolini florets to the skillet and sauté for 2-3 minutes, just to start softening them.
Step 5
Stir in cream of chicken soup, milk, 1 cup cheddar cheese, and mozzarella cheese. Season with salt, pepper, and optional red pepper flakes. Bring to a gentle simmer.
Step 6
Pour the mixture into the prepared baking dish. You can top with a little extra cheese if desired.
Step 7
Bake for 25-30 minutes, or until bubbling, the chicken is cooked through, and the broccolini is tender-crisp. Let stand for a few minutes before serving.
Tips
- If you don't have broccolini, regular broccoli florets or even cauliflower would work beautifully.
- Feel free to swap cheddar for your favorite melty cheese, like Colby Jack or Monterey Jack.
