Ingredients
Yield: 4 servings
For the Chickpea Salad
- 2 (15-ounce) cans chickpeas, rinsed and drained
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely diced
- 1/4 cup bell pepper (any color), finely diced
- 1/4 cup Kalamata olives, pitted and chopped
- 2 tbsp fresh parsley, chopped
For the Dressing
- 3 tbsp olive oil
- 2 tbsp red wine vinegar
- 1 tbsp lemon juice
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- Salt and black pepper to taste
For Serving
- 4 slices whole wheat bread or pita bread
- Lettuce leaves
- Tomato slices
Preparation
Step 1
In a medium bowl, lightly mash the drained chickpeas with a fork or potato masher. Don't mash completely; leave some texture for bite.
Step 2
Add the diced cucumber, red onion, bell pepper, chopped Kalamata olives, and fresh parsley to the bowl with the chickpeas. Stir to combine.
Step 3
In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, dried oregano, garlic powder, salt, and black pepper until well combined.
Step 4
Pour the dressing over the chickpea mixture and toss until everything is evenly coated.
Step 5
Taste and adjust seasonings as needed. You might want more salt, pepper, or a little extra lemon juice for brightness.
Step 6
Serve the chickpea salad piled high on toasted bread or in pita pockets with lettuce and tomato. This salad is also delicious on its own or scooped onto fresh greens.
Tips
- For a creamier texture, you can add 1-2 tablespoons of vegan mayo or plain Greek yogurt to the dressing.
- This salad keeps well in an airtight container in the refrigerator for up to 3-4 days, making it great for meal prep.
- Feel free to customize with other Mediterranean-inspired ingredients like sun-dried tomatoes, capers, or feta cheese.
