Ingredients
Yield: 4 servings
Main
- 2 (15 oz) cans chickpeas, rinsed and drained
- 1 English cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced or finely diced
- 1/2 cup Kalamata olives, pitted and halved
- 1/4 cup chopped fresh parsley
- 1/4 cup crumbled feta cheese (optional)
Lemon-Herb Dressing
- 1/4 cup extra virgin olive oil
- 3 tbsp fresh lemon juice
- 1 clove garlic, minced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
Preparation
Step 1
In a large bowl, combine the rinsed and drained chickpeas, diced cucumber, halved cherry tomatoes, red onion, Kalamata olives, and fresh parsley. Add feta cheese if using.
Step 2
In a small bowl, whisk together all the dressing ingredients: olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper until well combined.
Step 3
Pour the dressing over the chickpea and vegetable mixture. Toss gently to ensure all ingredients are evenly coated.
Step 4
Taste and adjust seasoning as needed. For best flavor, let the salad sit for at least 15 minutes before serving, or chill in the refrigerator for up to an hour.
Step 5
Serve chilled or at room temperature. Enjoy on its own, with pita bread, or stuffed into lettuce cups.
Tips
- For a little crunch, add some toasted pine nuts or sunflower seeds.
- This salad keeps well in the refrigerator for 3-4 days, making it excellent for meal prep.
