  • 1 cup boiling water or vegetable broth
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • ½ red onion, finely diced
  • ½ cup Kalamata olives, pitted and halved
  • ¼ cup chopped fresh parsley
  • ¼ cup chopped fresh mint (optional)

For the Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic, minced
  • ½ teaspoon dried oregano
  • Salt and black pepper to taste

For Serving (Optional)

  • Crumbled feta cheese
  • Extra lemon wedges

Preparation

  1. Step 1

    Place couscous in a heatproof bowl. Pour boiling water or broth over the couscous, cover tightly with a lid or plastic wrap, and let stand for 5 minutes, or until all liquid is absorbed. Fluff with a fork.

    In a small bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper to create the dressing.

    Add the fluffed couscous to the bowl with the vegetables and chickpeas. Pour the dressing over everything and toss gently until all ingredients are well combined and coated with the dressing.
