- 2 tbsp fresh lemon juice
- 1 tbsp Dijon mustard
- 1/4 cup finely chopped celery
- 1/4 cup finely chopped red onion
- 2 tbsp fresh dill, chopped
- 2 tbsp fresh parsley, chopped
- Salt and black pepper to taste
- Sandwich bread, lettuce wraps, or pita bread, for serving
- Optional: cucumber slices, tomato, leafy greens for serving
Preparation
Step 1
In a medium bowl, mash the rinsed and drained chickpeas with a fork or potato masher until chunky, but not completely smooth. Leave some whole for texture.
Step 2
Add the mayonnaise, lemon juice, and Dijon mustard to the mashed chickpeas. Stir well to combine.
Step 3
Fold in the finely chopped celery, red onion, fresh dill, and fresh parsley. Mix everything together until evenly distributed.
Step 4
Season with salt and black pepper to taste. Taste and adjust seasonings if needed – perhaps a little more lemon juice or a pinch more salt.

Cover and chill in the refrigerator for at least 15 minutes to allow the flavors to meld, or up to 30 minutes for best results.
