Ingredients

Yield: 4 servings

Main

  • 1 tbsp olive oil
  • 1 small shallot or 1/4 red onion, finely diced
  • 2 cloves garlic, minced
  • 1 (14 oz) can artichoke hearts, drained and roughly chopped
  • 1 cup orzo pasta
  • 3 cups vegetable broth
  • 1/2 cup fresh spinach (optional)
  • 1/4 cup grated Parmesan cheese (optional, for non-vegan)
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste

Preparation

  1. Step 1

Heat olive oil in a large skillet or Dutch oven over medium heat. Add diced shallot (or red onion) and cook until softened, about 3-4 minutes.

  2. Step 2

Stir in minced garlic and chopped artichoke hearts. Cook for 2-3 minutes, stirring occasionally, allowing artichokes to slightly brown.

  3. Step 3

Add the orzo pasta to the skillet and stir for 1 minute to lightly toast it.

  4. Step 4

Pour in the vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 10-12 minutes, or until the orzo is tender and most of the liquid has been absorbed. Stir occasionally to prevent sticking.

  5. Step 5

Remove from heat. Stir in fresh spinach (if using) until wilted, grated Parmesan cheese (if using), fresh lemon juice, lemon zest, and chopped parsley. Season with salt and black pepper to taste.

  6. Step 6

Serve immediately as a main dish or a vibrant side.

Tips

  • Using canned or jarred artichoke hearts (not marinated in oil) makes this recipe super quick.
  • A good quality vegetable broth will really enhance the flavor of this dish.
  • For a little protein boost, stir in some white beans or chickpeas at the end.
