  • 12 oz short pasta (such as orecchiette or penne)
  • 1 tbsp olive oil
  • 1 lb pre-cooked chicken sausage, thinly sliced
  • 3 cloves garlic, minced
  • 4 cups broccoli florets (fresh or frozen)
  • 1/2 cup chicken broth
  • Juice of 1 lemon (about 2-3 tbsp)
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • Red pepper flakes, to taste (optional)
  • Salt and fresh black pepper to taste

Preparation

  1. Step 1

    Cook pasta according to package directions in a large pot of salted water. Reserve 1/2 cup of pasta water before draining.

  2. Step 2

    While pasta cooks, heat olive oil in a large skillet or Dutch oven over medium-high heat. Add sliced chicken sausage and cook until lightly browned, about 5-7 minutes. Remove sausage and set aside.

  3. Step 3

    Add minced garlic to the same skillet and cook for 30 seconds until fragrant. Add broccoli florets and chicken broth. Bring to a simmer, then cover and cook for 5-7 minutes, or until broccoli is tender-crisp.

  4. Step 4

    Return sausage to the skillet with the broccoli. Add the cooked and drained pasta, lemon juice, Parmesan cheese, and a splash of the reserved pasta water. Toss everything together, adding more pasta water if needed to create a light sauce.

  5. Step 5

    Season with salt, black pepper, and red pepper flakes (if using). Serve immediately with extra Parmesan cheese on top.
