For the Burgers

  • 1 (15-oz) can black beans, rinsed and drained
  • 1/2 cup cooked brown rice or quinoa
  • 1/2 cup breadcrumbs (panko or regular)
  • 1/4 cup finely chopped red onion
  • 2 tbsp chopped fresh cilantro
  • 1 large egg
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper (optional, for heat)
  • Salt and black pepper to taste
  • 1-2 tbsp olive oil (for cooking)

For Serving

  • 4 burger buns
  • Lettuce, tomato, avocado, red onion, pickles, your favorite sauces

Preparation

  1. Step 1

    In a large bowl, mash the black beans with a fork or potato masher, leaving some whole for texture. Don't mash completely smooth.

  2. Step 2

    Add cooked brown rice (or quinoa), breadcrumbs, chopped red onion, cilantro, egg, chili powder, cumin, smoked paprika, cayenne (if using), salt, and pepper to the mashed beans. Mix thoroughly until well combined.

  3. Step 3

    Divide the mixture into 4 equal portions and form into patties, about 1-inch thick. If the mixture is too wet, add a little more breadcrumbs. If too dry, add a tiny bit of water.

  4. Step 4

    Heat olive oil in a large non-stick skillet over medium heat. Cook the patties for 5-7 minutes per side, or until golden brown and heated through. You can also bake them at 375°F (190°C) for 20-25 minutes, flipping once, or grill them carefully.

  5. Step 5

    Serve on toasted buns with your favorite burger toppings and condiments.

  • Ensure your black beans are well-drained before mashing to prevent soggy burgers.
  • Make a double batch and freeze uncooked patties between parchment paper for an even quicker meal next time.
