  • 1 yellow onion, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 cup frozen corn
  • 1.5 cups vegetable broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper (or more, to taste)
  • Salt and black pepper to taste
  • Optional toppings: shredded cheese, sour cream, avocado, fresh cilantro, tortilla chips

Preparation

  1. Step 1

    Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and red bell pepper and cook until softened, about 5-7 minutes.

    Add minced garlic, chili powder, cumin, smoked paprika, and cayenne pepper to the pot. Cook, stirring constantly, for 1 minute until fragrant.

    Stir in the diced tomatoes (undrained), rinsed black beans, frozen corn, and vegetable broth. Bring the chili to a simmer.

  4. Step 4

    Reduce heat to low, cover, and simmer for at least 15-20 minutes, stirring occasionally, to allow the flavors to meld. The longer it simmers, the more flavorful it will be.

  5. Step 5

    Taste and season with salt and black pepper as needed. Ladle into bowls and serve with your favorite toppings like shredded cheese, sour cream, avocado, or fresh cilantro. A side of tortilla chips is always a good idea!
