  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon turmeric
  • Pinch red pepper flakes (optional)
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 cup brown or green lentils, rinsed
  • 3 cups vegetable broth
  • 5 oz fresh baby spinach
  • Salt and black pepper to taste
  • Fresh cilantro or Greek yogurt for garnish (optional)

Preparation

  1. Step 1

    Heat olive oil in a large skillet or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.

    Stir in minced garlic, cumin, coriander, turmeric, and red pepper flakes (if using). Cook for 1 minute until fragrant.
