Ingredients
Yield: 4 servings
Main
- 1 tablespoon olive oil
- 1 yellow onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon turmeric
- Pinch red pepper flakes (optional)
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 cup brown or green lentils, rinsed
- 3 cups vegetable broth
- 5 oz fresh baby spinach
- Salt and black pepper to taste
- Fresh cilantro or Greek yogurt for garnish (optional)
Preparation
Step 1
Heat olive oil in a large skillet or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.
Step 2
Stir in minced garlic, cumin, coriander, turmeric, and red pepper flakes (if using). Cook for 1 minute until fragrant.
Step 3
Add the diced tomatoes, rinsed lentils, and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until lentils are tender. Stir occasionally to prevent sticking.
Step 4
Stir in the fresh baby spinach, cooking just until it wilts, about 2-3 minutes. Season with salt and black pepper to taste.
Step 5
Serve hot, garnished with fresh cilantro or a dollop of Greek yogurt if desired. Excellent with rice, crusty bread, or on its own.
Tips
- Rinse lentils thoroughly to remove any debris and excess starch.
- If the skillet becomes too dry during cooking, add a splash more vegetable broth or water.
- For a touch of creaminess, stir in a tablespoon of coconut milk at the end.
