  • 1 tbsp olive oil
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 4 cups vegetable broth
  • 2 (15 oz) cans cannellini beans, rinsed and drained
  • 5 oz fresh spinach
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and black pepper to taste
  • Optional: grated Parmesan cheese and crusty bread for serving

Preparation

  1. Step 1

    Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5 minutes.

    Add minced garlic and cook for 1 minute more until fragrant.

    Stir in the crushed tomatoes, vegetable broth, rinsed cannellini beans, oregano, and basil. Bring the soup to a simmer, then reduce heat to low, cover, and let it cook for 10 minutes to allow the flavors to meld.

    Stir in the fresh spinach a handful at a time, allowing it to wilt into the hot soup. Continue stirring until all the spinach has wilted.

    Season with salt and black pepper to taste. If you like, you can use an immersion blender to partially blend a portion of the soup for a creamier texture, leaving some beans whole.

  6. Step 6

    Ladle into bowls and serve hot, topped with grated Parmesan cheese and a side of crusty bread if desired.
