Ingredients
Yield: 4 servings
Main
- 1 tbsp olive oil
- 1 small yellow onion, chopped
- 2 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 4 cups vegetable broth
- 2 (15 oz) cans cannellini beans, rinsed and drained
- 5 oz fresh spinach
- 1 tsp dried oregano
- 1/2 tsp dried basil
- Salt and black pepper to taste
- Optional: grated Parmesan cheese and crusty bread for serving
Preparation
Step 1
Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5 minutes.
Step 2
Add minced garlic and cook for 1 minute more until fragrant.
Step 3
Stir in the crushed tomatoes, vegetable broth, rinsed cannellini beans, oregano, and basil. Bring the soup to a simmer, then reduce heat to low, cover, and let it cook for 10 minutes to allow the flavors to meld.
Step 4
Stir in the fresh spinach a handful at a time, allowing it to wilt into the hot soup. Continue stirring until all the spinach has wilted.
Step 5
Season with salt and black pepper to taste. If you like, you can use an immersion blender to partially blend a portion of the soup for a creamier texture, leaving some beans whole.
Step 6
Ladle into bowls and serve hot, topped with grated Parmesan cheese and a side of crusty bread if desired.
Tips
- For a heartier soup, add some cooked ditalini or small pasta during the last 5 minutes of simmering.
- A squeeze of lemon juice at the end can brighten up all the flavors.
- This soup freezes beautifully; cool completely before transferring to freezer-safe containers for future quick meals.
