The creamy white beans add a hearty texture and protein, making this a satisfying vegetarian meal. Perfect for a chilly evening or a light, nourishing lunch.
Ingredients
Yield: 4 servings
Main
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 4 cups vegetable broth
- 1 (15 oz) can cannellini beans, rinsed and drained
- 1 tsp dried basil
- 1/2 tsp dried oregano
- 1/4 tsp red pepper flakes (optional, for a little heat)
- Salt and freshly ground black pepper to taste
- 1/4 cup chopped fresh parsley or basil, for garnish
- Crusty bread, for serving
Preparation
Step 1
Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5 minutes.
Step 2
Stir in minced garlic and cook for 1 minute more until fragrant. Be careful not to burn the garlic.
Step 3
Add the crushed tomatoes, vegetable broth, rinsed cannellini beans, dried basil, dried oregano, and red pepper flakes (if using). Stir everything together.
Step 4
Bring the soup to a simmer, then reduce heat to low, cover, and let it cook for 10-15 minutes to allow the flavors to meld and deepen.
Step 5
Taste and season with salt and black pepper as needed. You may even want a pinch of sugar if your tomatoes are a bit tart.
Step 6
Ladle hot soup into bowls. Garnish with fresh parsley or basil and serve immediately with crusty bread.
Tips
- For a creamier texture, blend about 1 cup of the soup with an immersion blender or in a regular blender (carefully!), then return to the pot.
- Feel free to add other vegetables like diced carrots or zucchini along with the onion.
- A drizzle of good quality olive oil or a sprinkle of Parmesan cheese just before serving adds a nice finishing touch.
