Ingredients
Yield: 4 servings
For the Noodles
- 12 oz spaghetti, linguine, or ramen noodles
- 1 tbsp sesame oil (for tossing)
For the Szechuan Peanut Sauce
- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce (or tamari for gluten-free)
- 2 tbsp rice vinegar
- 2 tbsp honey or maple syrup
- 1 tbsp Sriracha or chili garlic sauce (adjust to taste)
- 1 tbsp sesame oil
- 1 tbsp fresh ginger, grated
- 2 cloves garlic, minced
- 1/2 tsp ground Szechuan peppercorns (optional, for authentic flavor)
- 1/4 cup hot water (or more, to thin)
For Serving (optional)
- Chopped green onions
- Crushed peanuts
- Red pepper flakes
- Shredded carrots
- Cooked chicken or tofu
Preparation
Step 1
Cook the noodles according to package directions in well-salted water. Drain, rinse briefly with cold water (to prevent sticking), and toss with 1 tbsp sesame oil. Set aside.
Step 2
While noodles cook, prepare the sauce: In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, Sriracha, 1 tbsp sesame oil, grated ginger, minced garlic, and Szechuan peppercorns (if using). Gradually add 1/4 cup hot water, whisking until the sauce is smooth and creamy. Add more hot water, a tablespoon at a time, if a thinner consistency is desired.
Step 3
Add the drained noodles to the bowl with the peanut sauce. Toss well to ensure all the noodles are thoroughly coated.
Step 4
Serve immediately, garnished with chopped green onions, crushed peanuts, or red pepper flakes, if desired. Feel free to add shredded carrots or your favorite protein for a more substantial meal.
Tips
- To make it a full meal, add cooked, shredded chicken, pan-fried tofu, or steamed edamame.
- Adjust the amount of Sriracha or chili garlic sauce to control the spice level.
- Leftovers are great cold the next day, perfect for lunch!
