Ingredients
Yield: 4 servings
Main
- 12 oz penne or rotini pasta
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 (14 oz) can artichoke hearts, drained and chopped
- 5 oz fresh spinach
- 1/2 cup vegetable broth
- 1/2 cup milk (dairy or non-dairy)
- 1/4 cup heavy cream (optional, for extra richness)
- 1/2 cup grated Parmesan cheese, plus more for serving
- 1/2 tsp salt
- 1/4 tsp black pepper
- Pinch of red pepper flakes (optional)
Preparation
Step 1
Cook pasta according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.
Step 2
While pasta cooks, heat olive oil in a large skillet or pot over medium heat. Add minced garlic and cook for 1 minute until fragrant. Add chopped artichoke hearts and cook for 2-3 minutes.
Step 3
Add fresh spinach to the skillet in batches if needed. Cook, stirring, until spinach wilts down, about 2-3 minutes. Pour in vegetable broth, milk, and heavy cream (if using). Bring to a gentle simmer.
Step 4
Stir in grated Parmesan cheese, salt, pepper, and red pepper flakes (if using). Cook for 2-3 minutes, stirring, until the sauce slightly thickens.
Step 5
Add the drained cooked pasta to the skillet with the sauce. Toss to coat everything evenly. If the sauce is too thick, add a splash or two of the reserved pasta water until it reaches your desired consistency.
Step 6
Serve immediately, topped with extra Parmesan cheese.
Tips
- For a heartier meal, add cooked, shredded chicken or white beans.
- Using frozen chopped spinach (thawed and squeezed dry) works well if fresh isn't available.
- A spoonful of cream cheese or mascarpone can be added to the sauce for an even richer, tangier flavor.
