  • 1 tbsp olive oil
  • 1 lb Italian sausage (sweet or spicy, casings removed)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1/2 cup chicken or vegetable broth
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • 1 (16 ounce) package potato gnocchi (shelf-stable)
  • 1/2 cup fresh spinach, roughly chopped
  • 1/4 cup grated Parmesan cheese, plus more for serving

Preparation

  1. Step 1

    Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.

  2. Step 2

    Add the diced onion to the skillet and cook until softened, about 3-4 minutes. Stir in the minced garlic, oregano, and red pepper flakes (if using) and cook for another minute until fragrant.

  3. Step 3

    Pour in the crushed tomatoes and chicken broth. Bring to a simmer, then add the gnocchi. Stir well to combine, cover, and reduce heat to medium-low. Cook for 8-10 minutes, or until the gnocchi are tender, stirring occasionally to prevent sticking.

  4. Step 4

    Stir in the fresh spinach and Parmesan cheese until the spinach wilts. Taste and season with salt and pepper as needed. Serve immediately with extra Parmesan cheese.
