Ingredients
Yield: 4 servings
Main
- 1 tbsp olive oil
- 1 lb Italian sausage (sweet or spicy, casings removed)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1/2 cup chicken or vegetable broth
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes (optional)
- 1 (16 ounce) package potato gnocchi (shelf-stable)
- 1/2 cup fresh spinach, roughly chopped
- 1/4 cup grated Parmesan cheese, plus more for serving
Preparation
Step 1
Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
Step 2
Add the diced onion to the skillet and cook until softened, about 3-4 minutes. Stir in the minced garlic, oregano, and red pepper flakes (if using) and cook for another minute until fragrant.
Step 3
Pour in the crushed tomatoes and chicken broth. Bring to a simmer, then add the gnocchi. Stir well to combine, cover, and reduce heat to medium-low. Cook for 8-10 minutes, or until the gnocchi are tender, stirring occasionally to prevent sticking.
Step 4
Stir in the fresh spinach and Parmesan cheese until the spinach wilts. Taste and season with salt and pepper as needed. Serve immediately with extra Parmesan cheese.
Tips
- For a creamier sauce, stir in a splash of heavy cream or a spoonful of cream cheese at the end.
- Add a handful of chopped bell peppers along with the onion for extra veggies and flavor.
- Leftovers reheat well on the stovetop with a splash of broth or water.
