- 8 oz spaghetti or linguine
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1-inch piece fresh ginger, grated
- 1/4 cup creamy peanut butter
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp honey or maple syrup
- 1 tsp sriracha (or to taste)
- 1/4 cup warm water (or pasta water)
- Green onions, chopped, for garnish
- Sesame seeds, for garnish
Preparation
Step 1
Cook pasta according to package directions. Reserve 1/2 cup of pasta water before draining.
Step 2
While pasta cooks, heat sesame oil in a small saucepan over medium heat. Add minced garlic and grated ginger; cook for 1 minute until fragrant. Remove from heat.
Step 3
In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, honey/maple syrup, sriracha, and the cooked garlic and ginger from the saucepan. Slowly whisk in the warm water (or reserved pasta water) until the sauce is smooth and creamy. Add more water if needed to reach desired consistency.
Step 4
Add the drained pasta to the bowl with the peanut sauce. Toss until completely coated. If the sauce seems too thick, add a splash more reserved pasta water.
Step 5
Serve immediately, garnished with chopped green onions and sesame seeds.
