  • 1/4 cup water (or more, to thin)

For the Stir-Fry

  • 1 tbsp sesame oil or olive oil
  • 1 head broccoli, cut into small florets
  • 2 carrots, thinly sliced or julienned
  • 1 red bell pepper, thinly sliced
  • 1 cup snap peas or snow peas
  • Cooked rice or noodles, for serving
  • Chopped peanuts and fresh cilantro for garnish (optional)

Preparation

  1. Step 1

    Prepare the sauce: In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, maple syrup (or honey), grated ginger, minced garlic, and water until smooth. If it's too thick, add a little more water until it reaches a pourable consistency.
