  • 12 oz linguine, spaghetti, or ramen noodles
  • 3-4 cups broccoli florets, cut into small pieces
  • 1 tbsp sesame oil

Peanut Sauce

  • 1/2 cup creamy peanut butter
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1 tbsp fresh ginger, grated
  • 1 clove garlic, minced
  • 1/4 tsp red pepper flakes (or more, to taste)
  • 1/4 - 1/2 cup hot water (from cooking noodles)

Garnish (Optional)

  • Chopped roasted peanuts
  • Sesame seeds
  • Sliced green onions

Preparation

  1. Step 1

    Bring a large pot of salted water to a boil. Add broccoli florets and cook for 2-3 minutes, just until vibrant green and tender-crisp. Remove broccoli with a slotted spoon and immediately plunge into an ice bath or rinse with cold water to stop cooking. Drain well.

  2. Step 2

    Add noodles to the boiling water and cook according to package directions until al dente. Before draining, reserve 1/2 cup of the hot pasta water. Drain noodles well.

  3. Step 3

    While noodles cook, prepare the peanut sauce: In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, grated ginger, minced garlic, and red pepper flakes until smooth. Gradually whisk in 1/4 cup of the reserved hot pasta water until the sauce reaches a creamy, pourable consistency. Add more hot water, a tablespoon at a time, if a thinner sauce is desired.

  4. Step 4

    In the large pot or a spacious serving bowl, combine the drained noodles, blanched broccoli, and peanut sauce. Toss vigorously until everything is evenly coated.

  5. Step 5

    Taste and adjust seasoning as needed (add more soy sauce for saltiness, honey for sweetness, or red pepper flakes for heat). Serve immediately, garnished with chopped peanuts, sesame seeds, and green onions, if using.

Tips

  • For added protein, stir in cooked shredded chicken, tofu, or edamame.
  • If you don't have fresh ginger, a good quality ground ginger (about 1/2 tsp) can be used in a pinch.
