- ¼ cup reserved pasta water
- 2 tablespoons unsalted butter
- 1 large lemon, zested and juiced
- 2 cloves garlic, minced
- ¼ teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- Fresh basil or parsley, chopped, for garnish
Preparation
Step 1
Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Before draining, reserve about 1 cup of pasta water.

While the pasta cooks, in a large bowl, whisk together the ricotta cheese, Parmesan cheese, lemon zest, and lemon juice. Season with a pinch of salt and pepper.

In a large skillet over medium heat, melt the butter. Add the minced garlic and red pepper flakes (if using) and cook for 1 minute until fragrant, being careful not to burn the garlic.

Drain the pasta and add it directly to the skillet with the garlic butter. Add the ricotta mixture to the skillet.

Pour in about ¼ cup of the reserved pasta water. Toss everything together, adding more pasta water a tablespoon at a time if needed, until a creamy sauce forms and coats the pasta beautifully.

Taste and adjust seasoning with salt and pepper. Serve immediately, garnished with fresh herbs and extra Parmesan cheese.
