  • 1 tbsp olive oil
  • 1 (15-oz) can chickpeas, rinsed, drained, and patted dry
  • 1 small red onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 2 cups chopped broccoli florets or snap peas
  • 3 cloves garlic, minced
  • Juice of 1 lemon (about 2-3 tbsp)
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp fresh dill, chopped (or 1 tbsp dried)
  • Salt and fresh black pepper to taste
  • Cooked quinoa or couscous, for serving

Preparation

  1. Step 1

    Heat olive oil in a large skillet or wok over medium-high heat.

  2. Step 2

    Add the patted-dry chickpeas to the hot skillet and cook, stirring occasionally, until slightly golden and crispy, about 5-7 minutes. Remove chickpeas and set aside.

  3. Step 3

    Add sliced red onion and bell pepper to the same skillet. Cook for 3-4 minutes until they begin to soften. Add broccoli florets (or snap peas) and continue to cook for another 3-5 minutes, until vegetables are crisp-tender.

  4. Step 4

    Stir in minced garlic and cook for 30 seconds until fragrant.

  5. Step 5

    Return the cooked chickpeas to the skillet. Drizzle with lemon juice and sprinkle with fresh parsley and dill. Toss gently to combine and heat through.

  6. Step 6

    Season with salt and pepper to taste. Serve immediately over cooked quinoa or couscous.

  • For a bit of heat, add a pinch of red pepper flakes with the garlic.
  • Feel free to swap out the vegetables based on what you have on hand – zucchini, mushrooms, or carrots would also be delicious.
