- 1 tbsp olive oil
- 1 (15-oz) can chickpeas, rinsed, drained, and patted dry
- 1 small red onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 2 cups chopped broccoli florets or snap peas
- 3 cloves garlic, minced
- Juice of 1 lemon (about 2-3 tbsp)
- 1/4 cup fresh parsley, chopped
- 2 tbsp fresh dill, chopped (or 1 tbsp dried)
- Salt and fresh black pepper to taste
- Cooked quinoa or couscous, for serving
Preparation
Step 1
Heat olive oil in a large skillet or wok over medium-high heat.
Step 2
Add the patted-dry chickpeas to the hot skillet and cook, stirring occasionally, until slightly golden and crispy, about 5-7 minutes. Remove chickpeas and set aside.
Step 3
Add sliced red onion and bell pepper to the same skillet. Cook for 3-4 minutes until they begin to soften. Add broccoli florets (or snap peas) and continue to cook for another 3-5 minutes, until vegetables are crisp-tender.
Step 4
Stir in minced garlic and cook for 30 seconds until fragrant.
Step 5
Return the cooked chickpeas to the skillet. Drizzle with lemon juice and sprinkle with fresh parsley and dill. Toss gently to combine and heat through.
Step 6
Season with salt and pepper to taste. Serve immediately over cooked quinoa or couscous.

- For a bit of heat, add a pinch of red pepper flakes with the garlic.
