  • 1 cup boiling water or vegetable broth
  • 1/2 cucumber, diced
  • 1/2 red bell pepper, diced
  • 1/4 red onion, finely diced
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh parsley
  • 1 (15 oz) can chickpeas, rinsed and drained
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • Salt and freshly ground black pepper to taste
  • Optional additions: crumbled feta, cherry tomatoes, grilled chicken/fish

Preparation

    Place instant couscous in a heatproof bowl. Pour boiling water or broth over the couscous, cover with a plate or plastic wrap, and let sit for 5 minutes, or until all liquid is absorbed. Fluff with a fork.

    While the couscous is resting, prepare your vegetables. In a large bowl, combine diced cucumber, red bell pepper, red onion, fresh dill, fresh parsley, and rinsed chickpeas.

    To the vegetable mixture, add olive oil, lemon juice, salt, and pepper. Toss well to combine.

    Add the fluffed couscous to the bowl with the vegetables and toss gently to combine all ingredients. Taste and adjust seasonings as needed.
