Ingredients
Yield: 2 servings
Main
- 1 cup instant couscous
- 1 cup boiling water or vegetable broth
- 1/2 cucumber, diced
- 1/2 red bell pepper, diced
- 1/4 red onion, finely diced
- 1/4 cup chopped fresh dill
- 1/4 cup chopped fresh parsley
- 1 (15 oz) can chickpeas, rinsed and drained
- 2 tbsp olive oil
- Juice of 1 lemon
- Salt and freshly ground black pepper to taste
- Optional additions: crumbled feta, cherry tomatoes, grilled chicken/fish
Preparation
Step 1
Place instant couscous in a heatproof bowl. Pour boiling water or broth over the couscous, cover with a plate or plastic wrap, and let sit for 5 minutes, or until all liquid is absorbed. Fluff with a fork.
Step 2
While the couscous is resting, prepare your vegetables. In a large bowl, combine diced cucumber, red bell pepper, red onion, fresh dill, fresh parsley, and rinsed chickpeas.
Step 3
To the vegetable mixture, add olive oil, lemon juice, salt, and pepper. Toss well to combine.
Step 4
Add the fluffed couscous to the bowl with the vegetables and toss gently to combine all ingredients. Taste and adjust seasonings as needed.
Step 5
Divide the couscous mixture into two bowls. If desired, top with crumbled feta, extra cherry tomatoes, or a protein like grilled chicken or fish for a more substantial meal. Serve immediately or chill for later.
Tips
- Use pearl couscous (Israeli couscous) instead of instant for a chewier texture; just adjust cooking time according to package directions.
- This recipe is fantastic for meal prepping! Make a big batch and portion it into containers for grab-and-go lunches.
