- 12 oz short pasta (like rotini or penne)
- 1 tbsp olive oil
- 1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup freshly grated Parmesan cheese
- 2 tbsp fresh lemon juice
- 1/4 cup chopped fresh dill
- Salt and freshly ground black pepper to taste
Preparation
Step 1
Cook pasta according to package directions. Drain and reserve 1/2 cup pasta water.

While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden brown and cooked through, about 5-7 minutes. Season with salt and pepper.
Step 3
Reduce heat to medium. Stir in chicken broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer, then stir in heavy cream, Parmesan cheese, and lemon juice. Cook for 2-3 minutes, or until the sauce thickens slightly.
Step 4
Add the cooked pasta and fresh dill to the skillet. Toss to coat, adding a little reserved pasta water if needed to reach your desired sauciness. Taste and adjust seasoning with salt and pepper.
Step 5
Serve immediately, garnished with extra fresh dill if desired.
