- 1 (15-oz) can kidney beans, rinsed and drained (optional, or another can black beans)
- 1 (15-oz) can corn, drained (or 1 cup frozen corn)
- 1.5 cups vegetable broth
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper (optional, for heat)
- Salt and black pepper to taste

Preparation
Step 1
Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and red bell pepper. Cook, stirring occasionally, until softened, about 5-7 minutes.
