For the Tacos
- 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes

- Salt and black pepper to taste
- 1 (15 oz) can black beans, rinsed and drained
- 1/4 cup water or vegetable broth
- 8-12 small corn or flour tortillas
- Optional toppings: avocado slices, salsa, sour cream/Greek yogurt, cilantro, pickled red onions, crumbled cojita cheese

Step 1
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
