- 1 small onion, diced
- 1 bell pepper (any color), diced
- 2 cloves garlic, minced
- 1 (15-oz) can black beans, rinsed and drained
- 1 (14.5-oz) can diced tomatoes, undrained
- 1 cup long-grain white rice, uncooked
- 2 cups vegetable broth
- 1 tsp chili powder
- 1/2 tsp ground cumin
- 1/4 tsp dried oregano
- Salt and freshly ground black pepper, to taste
- 1/4 cup chopped fresh cilantro, for garnish
- Lime wedges, for serving (optional)
- Sour cream or avocado, for serving (optional)
Preparation
Step 1
Heat olive oil in a large oven-safe skillet or Dutch oven over medium heat. Add diced onion and bell pepper and cook until softened, about 5-7 minutes.
Step 2
Stir in minced garlic, chili powder, cumin, and oregano. Cook for 1 minute until fragrant.
Step 3
Add rinsed black beans, undrained diced tomatoes, uncooked rice, and vegetable broth to the skillet. Season with salt and pepper. Stir well to combine.
Step 4
Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and most of the liquid has been absorbed.
Step 5
Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork. Taste and adjust seasoning as needed.
Step 6
Serve warm, garnished with fresh cilantro and a squeeze of lime juice. Offer sour cream or avocado on the side, if desired.
