Ingredients

Yield: 4 servings

Main

  • 1 tbsp coconut oil or vegetable oil
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1/2 tsp turmeric powder
  • 1/4 tsp cayenne pepper (optional, for heat)
  • 1 (15 oz) can crushed tomatoes
  • 1 (13.5 oz) can full-fat coconut milk
  • 1 (15 oz) can chickpeas, rinsed and drained
  • 5 oz fresh spinach
  • Salt and black pepper to taste
  • Cooked basmati rice, for serving
  • Fresh cilantro, chopped, for garnish (optional)

Preparation

  1. Step 1

Heat coconut oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook for 5-7 minutes until softened and translucent.

  2. Step 2

Stir in minced garlic and grated ginger, and cook for 1 minute until fragrant.

  3. Step 3

Add curry powder, cumin, turmeric, and cayenne pepper (if using). Cook, stirring constantly, for 1 minute until spices are fragrant.

  4. Step 4

Pour in crushed tomatoes and coconut milk. Stir well to combine. Bring to a gentle simmer, then reduce heat to low and let it cook for 10 minutes, allowing the flavors to deepen.

  5. Step 5

Stir in the rinsed chickpeas and fresh spinach. Cook for 2-3 minutes, stirring, until the spinach has wilted into the curry.

  6. Step 6

Season with salt and black pepper to taste. Serve hot over basmati rice, garnished with fresh cilantro if desired.

Tips

  • Don't rush the spice blooming step; it really enhances the flavor of the curry.
  • For a richer flavor, use full-fat coconut milk; light coconut milk will result in a thinner curry.
  • Add other vegetables like chopped bell peppers or zucchini along with the chickpeas for extra nutrition.
