Soup

  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breast or thighs, cut into 1-inch pieces

  • 6 cups chicken broth

Dumplings

  • 1.5 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp butter, melted
  • 3/4 cup milk

Preparation

  1. Step 1

    Heat olive oil in a large Dutch oven or pot over medium-high heat. Add chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove chicken and set aside.

    Once the soup has simmered, if using, stir in the heavy cream. Drop the dumpling dough by rounded spoonfuls directly into the simmering soup. Ensure dumplings are submerged but not touching too much.
