  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 large sweet potatoes (about 1.5 lbs), peeled and diced
  • 4 cups vegetable broth
  • 1/2 cup full-fat coconut milk (canned)
  • 1/2 tsp ground cumin
  • Salt and black pepper to taste
  • Fresh cilantro or a swirl of coconut milk, for garnish

Preparation

  1. Step 1

    Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 3-4 minutes.

    Add minced garlic and grated ginger, cooking for 1 minute more until fragrant.

    Stir in diced sweet potatoes and ground cumin. Cook for 2-3 minutes, stirring to coat the sweet potatoes in the aromatics.
