Sheet Pan Lemon Dill Veggies & Feta

Sheet pan meals are a weeknight hero, and this one is no exception! Loaded with vibrant flavors from fresh lemon and dill, and finished with creamy, salty feta, these roasted vegetables are incredibly satisfying. It's minimal effort, maximum flavor, and even easier clean-up!

Ingredients

Yield: 4 servings

Main

  • 1 lb small potatoes, quartered (Yukon Gold or red potatoes work well)
  • 1 bell pepper (any color), cored and chopped
  • 1 zucchini, chopped
  • 1 red onion, roughly chopped
  • 2 tbsp olive oil
  • 1 tbsp fresh dill, chopped (or 1 tsp dried)
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Juice of 1/2 lemon
  • 4 oz crumbled feta cheese

Optional

  • Cherry tomatoes (add during last 10 minutes of baking)
  • A handful of Kalamata olives

Preparation

  1. Step 1

    Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

  2. Step 2

    In a large bowl, combine the quartered potatoes, bell pepper, zucchini, and red onion. Drizzle with olive oil, add chopped dill, garlic powder, salt, and pepper. Toss well to ensure all vegetables are evenly coated.

  3. Step 3

    Spread the seasoned vegetables in a single layer on the prepared baking sheet. Make sure not to overcrowd the pan; use two pans if necessary to ensure even roasting.

  4. Step 4

    Roast for 20-25 minutes, flipping halfway through, until vegetables are tender and slightly caramelized. If adding cherry tomatoes or olives, add them during the last 10 minutes of baking.

  5. Step 5

    Remove the baking sheet from the oven. Squeeze fresh lemon juice over the hot vegetables and sprinkle generously with crumbled feta cheese. Toss gently.

  6. Step 6

    Serve immediately as a light meal, or as a vibrant side dish to grilled chicken or fish.

Tips

  • Vary the vegetables based on what you have on hand or what's in season; broccoli, asparagus, or carrots would also be delicious.
  • For a complete meal, add canned chickpeas (drained and rinsed) to the sheet pan with the other vegetables.
  • Don't skip the lemon juice at the end – it really brightens all the flavors!
