Savory Miso Mushroom Ramen

When you're craving something warm, cozy, and bursting with umami, this Savory Miso Mushroom Ramen is calling your name! It's surprisingly simple to make at home and delivers all the complex flavors you love from your favorite ramen shop.

Ingredients

For the Broth & Mushrooms

  • 1 tbsp sesame oil
  • 8 oz mixed mushrooms (cremini, shiitake, oyster), sliced
  • 2 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 4 cups vegetable broth
  • 2 tbsp white or red miso paste
  • 1 tbsp soy sauce
  • 1 tsp rice vinegar

For the Ramen

  • 2 blocks instant ramen noodles (discard seasoning packets or save for another use)
  • 2 soft-boiled eggs, halved
  • ¼ cup corn kernels (fresh or frozen)
  • 2 sheets nori (seaweed), cut into strips
  • Sliced green onions, for garnish
  • Chili oil, for serving (optional)

Preparation

  1. Step 1

    Heat sesame oil in a medium pot or Dutch oven over medium-high heat. Add sliced mushrooms and cook, stirring occasionally, until deeply browned and tender, about 5-7 minutes. Remove half of the cooked mushrooms and set aside for garnish.

  2. Step 2

    Add minced garlic and grated ginger to the pot with the remaining mushrooms. Cook for 1 minute until fragrant.

  3. Step 3

    Pour in vegetable broth. Bring to a simmer. In a small bowl, whisk miso paste with a few spoonfuls of the hot broth until smooth, then stir the miso mixture back into the pot. Add soy sauce and rice vinegar. Keep warm over low heat.

  4. Step 4

    Cook ramen noodles according to package directions in a separate pot of boiling water. Drain well.

  5. Step 5

    Divide cooked noodles into two serving bowls. Ladle the hot miso mushroom broth over the noodles. Arrange soft-boiled egg halves, corn kernels, reserved cooked mushrooms, and nori strips on top.

  6. Step 6

    Garnish with sliced green onions and a drizzle of chili oil, if desired. Serve immediately.

Tips

  • To make perfect soft-boiled eggs, simmer eggs for exactly 6-7 minutes, then immediately transfer to an ice bath.
  • Feel free to add other veggies like baby bok choy or spinach directly to the hot broth just before serving.
