It's packed with flavor, thanks to hearty lentils, tangy feta, and a bright lemon dressing, plus it's incredibly easy to make. Perfect for meal prep, a light lunch, or a flavorful side dish!

For the Salad

  • 1 cup green or brown lentils, rinsed
  • 3 cups vegetable broth or water
  • 1/2 red onion, finely diced
  • 1 cucumber, diced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint (optional, but recommended)

For the Dressing

  • 3 tbsp olive oil
  • Juice of 1 lemon
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • Salt and black pepper to taste

Preparation

  1. Step 1

    Combine rinsed lentils and vegetable broth (or water) in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until lentils are tender but still hold their shape. Drain any excess liquid and let cool slightly.

    While lentils are cooking, prepare the dressing: In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper until emulsified.

    In a large bowl, combine the cooled lentils, diced red onion, diced cucumber, crumbled feta cheese, fresh parsley, and fresh mint (if using).

  4. Step 4

    Pour the dressing over the salad ingredients and toss gently to combine. Taste and adjust seasoning as needed.

  5. Step 5

    Serve immediately or chill for at least 30 minutes for flavors to meld. This salad holds up well in the fridge for a few days.
