- 1 small red onion, finely diced
- 1 red bell pepper, diced
- 1 (15 oz) can black beans, rinsed and drained
- 1 (15 oz) can corn, drained
- 1/2 cup fresh cilantro, chopped
Lime-Cumin Dressing
- 3 tbsp olive oil
- 2 tbsp fresh lime juice
- 1 clove garlic, minced
- 1 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp black pepper

- Avocado, diced
- Salsa
- Sour cream or Greek yogurt
- Crumbled tortilla chips
Preparation
Step 1
Cook rice according to package directions. While rice cooks, prepare the vegetables and dressing.

In a large skillet, heat 1 tbsp olive oil over medium heat. Add diced red onion and red bell pepper. Sauté for 5-7 minutes, until softened.

Stir in the rinsed and drained black beans and drained corn. Cook for another 3-5 minutes, allowing the flavors to meld. Remove from heat.

While the bean mixture is cooking, prepare the dressing: In a small bowl, whisk together 3 tbsp olive oil, fresh lime juice, minced garlic, ground cumin, salt, and pepper.
