- 4 cups vegetable broth
- 1 (15 oz) can chickpeas, rinsed and drained
- 5 oz fresh spinach
- Juice of 1/2 lemon (about 1.5 tbsp)
- 1/4 cup crumbled feta cheese (optional, for serving)
- Salt and black pepper to taste
Preparation
Step 1
Heat olive oil in a large skillet or pot over medium heat. Add orzo and cook, stirring frequently, for 2-3 minutes until lightly toasted and fragrant.

Stir in minced garlic and cook for 30 seconds until fragrant.

Pour in the vegetable broth and bring to a simmer. Reduce heat to medium-low, cover, and cook for 8-10 minutes, or until orzo is al dente and most of the liquid has been absorbed, stirring occasionally.

Stir in the rinsed chickpeas and fresh spinach. Cook for 2-3 minutes, stirring, until the spinach has wilted.

Remove from heat. Stir in lemon juice. Season with salt and black pepper to taste.
