- 2 sweet potatoes, peeled and diced into 1/2-inch cubes
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp ground cumin

- 1 (15 ounce) can black beans, rinsed and drained
- 1/4 cup vegetable broth or water
- Salt and black pepper to taste

- 8-12 small corn or flour tortillas
- Your favorite toppings: diced avocado, chopped cilantro, queso fresco, sour cream/Greek yogurt, salsa, lime wedges

Step 1
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a medium bowl, toss diced sweet potatoes with 1 tbsp olive oil, 1/2 tsp chili powder, 1/4 tsp ground cumin, smoked paprika, salt, and pepper. Spread in a single layer on the prepared baking sheet.

Roast for 20-25 minutes, flipping halfway, until the sweet potatoes are tender and lightly caramelized.

While sweet potatoes roast, prepare the black beans: In a medium skillet, heat a drizzle of oil over medium heat. Add the rinsed and drained black beans, remaining 1/2 tsp chili powder, and 1/4 tsp ground cumin. Stir well. Add the vegetable broth or water and simmer for 5-7 minutes, until the liquid has mostly evaporated and the beans are nicely seasoned. Taste and season with salt and pepper.

Warm the tortillas according to package directions (microwave, dry skillet, or oven).
