  • 1 zucchini, cut into 1/2-inch half-moons
  • 1 pint cherry tomatoes
  • 1/2 red onion, cut into wedges
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and freshly ground black pepper to taste
  • Optional: 1 cup cooked quinoa or couscous for serving
  • Optional Garnish: Fresh parsley or basil, chopped

Preparation
